Tropea onions in sweet and sour
Preparation and cooking time: 30 minutes
Ingredients for 4 people
- 1 kg of red Tropea onions
- 1 cup Principe di Gerace organic extra virgin olive oil
- 1 cup Principe di Gerace balsamic vinegar
- A handful of fresh mint leaves
- A handful of salt
Cut the onions into small slices vertically and place them in a non-stick frying pan
with extra virgin olive oil and salt. Cover with a lid and cook over moderate heat until the onions are wilted, after cooking, the onions should still be pink and not too soft in consistency.
Add the balsamic vinegar and let it to dry stirring occasionally with a wooden spatula. As soon as the vinegar will be absorbed add a handful of fresh mint and mix gently.
Serve warm or cold with some mint leaves to decorate
