Carrot Cake

Preparation and cooking time: 35 minutes

Ingredients for 6 people

  • 225g organic grated carrots
  • 200g organic organic brown sugar
  • 225g Principe di Gerace organic extra virgin olive oil
  • 225g organic plain wholemeal flour
  • 225g organic chopped walnuts
  • 2 organic eggs
  • Grated zest of 1 organic orange
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon


Mix the eggs with the sugar, when smooth add all the ingredients together and place in a baking tin greased with organic Extra virgin olive oil.

Cook in preheated oven at 180° for about 45 min.

(Check with a wooden stick - the cake is ready when it doesn't stick!)

Serve warm or cold.
