Pasta with tuna and olives sauce

Prep and Cooking Time: 15 minutes

Ingredients for 4 people

  • 320g Pasta of durum wheat semolina
  • 1 jar of Principe di Gerace Tuna in organic extra virgin olive oil
  • 1/4 cup of Principe di Gerace organic chili flavored extra virgin olive oil
  • 1/4 cup of Principe di Gerace organic garlic flavored extra virgin olive oil 8 cherry tomatoes
  • 1\2 jar of Principe di Gerace organic green olives
  • a clove of garlic
  • a handful of Principe di Gerace organic Capers in salt
  • a handful of fresh parsley
  • salt

Preparation

Take a large frying pan, pour garlic flavored extra virgin olive oil and chop the fresh garlic, let fry slowly and add the cherry tomatoes cut in half pieces. Cover the pan with a lid and cook for a few minutes.

In a separate bowl pour the tuna and crush it. Rinse olives and capers and put aside. Lift the lid and add tuna, olives and capers, after a few minutes turn off the fire.

Boil pasta in salted water for about 6 minutes, must be “al dente”. Drain pasta and pour into the pan. Mix adding half of the fresh basil and pouring chili flavored extra virgin olive oil, add a cup of the pasta boiling water. Stir to combine.

Top pasta with the remaining parsley leaves and serve very hot!

Tipps: if you like hot taste you can add fresh hot chili

Mediterranean pasta salad

Prep and Cooking Time: 15 minutes

Ingredients for 4 people

  • 200g farfalle or conchiglie pasta
  • 1 jar of Principe di Gerace Tuna in organic extra virgin olive oil
  • 1 jar of Principe di Gerace black or green olives
  • 2 large organic tomatoes
  • 1/2 cup Principe di Gerace organic extra virgin olive oil
  • 1/4 cup Principe di Gerace organic flavoured oregano extra virgin olive oil
  • 1/4 cup Principe di Gerace organic garlic flavoured extra virgin olive oil
  • a handful of fresh basil leaves

Preparation

Boil the pasta in salted water for 8 minutes or until al dente. Cool under a cold tap and drain well.

Put the chopped tomato, tuna, olives and basil leaves in a small bowl and mix gently. Season with the olive oil and flavored oils. Pour into a large salad bowl. Add to the pasta with the remaining basil leaves and mix gently.

Serve fresh.

Couscous Salad with fresh pesto

Preparation and cooking Time: 15 min

Ingredients for 4 people

  • 4 cups dry couscous
  • 5 cups water
  • 1/4 cup Principe di Gerace organic extra virgin olive oil
  • 2 tsp. salt
  • 4 large diced tomatoes,
  • 30g. mozarella cheese, cubed

For fresh pesto sauce:

  • 50g fresh basil
  • 1 cup Principe di Gerace organic extra virgin olive oil
  • 1/4 cup Principe di Gerace garlic flavoured extra virgin olive oil
  • a handful of nuts (pine nuts, almonds or nuts)

Preparation

Mix the water, olive oil, and salt into a large pot. Bring to boil and add couscous to boiling water. Remove from heat immediately and let couscous stand for some minutes (five or six)

Fluff the couscous with a fork, breaking up any large lumps. Carry out this operation gently.

Prepare the pesto sauce putting together all the ingredients in a mixer.

Stir pesto sauce into couscous; distribute gently. Let couscous cool for one hour.

Add diced tomatoes and cubed mozzarella cheese to couscous/pesto mixture.

Serve cold.

Spaghetti “aglio olio e peperoncino”

Preparation and cooking Time: 15 min

Ingredients for 4 people

  • 320g spaghetti
  • 1/2 cup Principe di Gerace extra-virgin olive oil
  • 1/3 cup Principe di Gerace bruschetta flavored extra-virgin olive oil
  • 3 garlic cloves, peeled
  • 1 tablespoon red fresh pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup ground toasted bread

Preparation

In a large pan, heat the extra virgin olive oil and the bruschetta flavored extra virgin olive oil over medium heat. Add the chopped garlic and saute until light brown. In order not to burn the garlic remove the pan from the stove. Add the red pepper flakes.

In a large pot, bring to boil water and add salt. Add pasta and cook until al dente for about 6 to 8 minutes. Drain pasta reserving a cup of the pasta water. The reserved pasta water will help create the sauce.

Turn on the stove, place the spaghetti into the pan and mix carefully add the reserved pasta water and stir to combine. Before serving top with the chopped parsley and springle the ground toasted bread on each plate.

Tipps: if you like very hot taste you can add more fresh hot chili
