Diced eggplant with mint

Preparation and cooking time: 30 minutes

Ingredients for 4 people

  • 1 kg organically grown eggplant
  • 1 cup Principe di Gerace organic extra virgin olive oil
  • 1 cup Principe di Gerace organic balsamic vinegar
  • A handful of fresh mint leaves
  • A handful of salt

Preparation

Cut the eggplant into small cubes with a thickness of about 1 cm, put them in
a large non-stick frying pan with extra virgin olive oil. Add salt.
Cook over medium heat, stirring occasionally with a wooden spatula until the eggplant will be cooked.
Add the balsamic vinegar and let it dry. As soon as the vinegar will be absorbed add a handful of fresh mint and turn off the fire.
Serve warm or cold
with some mint leaves to decorate

Tropea onions in sweet and sour

Preparation and cooking time: 30 minutes

Ingredients for 4 people

  • 1 kg of red Tropea onions
  • 1 cup Principe di Gerace organic extra virgin olive oil
  • 1 cup Principe di Gerace balsamic vinegar
  • A handful of fresh mint leaves
  • A handful of salt

Preparation

Cut the onions into small slices vertically and place them in a non-stick frying pan
with extra virgin olive oil and salt. Cover with a lid and cook over moderate heat until the onions are wilted, after cooking, the onions should still be pink and not too soft in consistency.
Add the balsamic vinegar and let it to dry stirring occasionally with a wooden spatula. As soon as the vinegar will be absorbed add a handful of fresh mint and mix gently.
Serve warm or cold with some mint leaves to decorate

Oranges and grapefruit salad

Ingredients for 4 people

  • 4 fresh organically grown oranges
  • 2 fresh organically grown grapefruits
  • 1/4 cup principe di Gerace organic extra virgin olive oil
  • 1/4 cup principe di Gerace organic balsamic vinegar
  • 2/3 cup orange juice
  • pink salt
  • pink pepper

Preparation

To prepare salad: in a large bowl cut the oranges and the grapefruit in slices and combine together.

For the vinaigrette: in a large jar with a lid, mix the olive oil, orange juice, vinegar and salt. Seal the jar, and shake to mix.

Divide the salad mixture into individual servings. Pour vinaigrette over salad mixture.

Serve fresh topping with pink pepper.

Summer tomatoes salad

Ingredients for 4 people

  • 2 large organically grown tomatoes
  • 1 sliced yellow or green organically grown pepper
  • 1 sliced red Tropea onions
  • 1\4 cup Principe di Gerace organic extra virgin olive oil
  • 1\4 cup Principe di Gerace organic flavoured oregano extra virgin olive oil
  • 1 jar Principe di Gerace organic green or black olives
  • 1/3 cup Principe di Gerace organic capers
  • 1/2 cup cubed mozzarella cheese
  • 1 handful of dried oregano
  • salt

Preparation

In a medium bowl slice all vegetables. Rince capers and olives under running water and add to vegetables. In a large jar with a lid, mix the olive oil, the flavoured oil, salt and oregano. Seal the jar, and shake to mix. Season the sald and mix gently. Add the mozzarella cheese and serve with fresh bread.

Potato salad

Preparation and Cooking Time: 30 minutes

Ingredients for 4 people

  • 1 kg of boiled potatoes
  • 1/4 cup Principe di Gerace organic garlic flavored extra virgin olive oil
  • 1\2 jar of Principe di Gerace anchovies fillets in organic extra virgin olive oil
  • 1 jar of Principe di Gerace organic black olives in brine
  • a handful of Principe di Gerace organic capers in salt
  • a pinch of fresh oregano
  • a pinch of fresh parsley

Preparation

Boil potates until cooked but not overcooked, rince under running water and immediately peel them. Break the potatoes with your hands and put in a large bowl.

Open the fillets and cut each one in two pieces, rince the olives and capers and add to the potatoes. Season with the garlic flavoured extra virgin olive oil, the fresh oregano and parsley, stir gently.

Serve fresh.
